"Our first green choice was to have a vegetarian meal. We're both vegetarians, and we thought our guests wouldn't mind, especially if the food was good! We asked our caterer to ensure that the coffee service items were Fair Trade Certified, and we worked with her to procure Dean's Beans coffee, Numi Tea, and Equal Exchange sugar packets. (Since we purchased and shipped the items to our caterer, she didn't charge us for serving them, which was nice.) We also asked our caterer about incorporating some organic or local produce into the meal, even if it would be too expensive to source all ingredients this way, and to set up a sign telling our guests about the nearby farm that had grown any local produce."
